Cool Monday in paradise

We woke up to 54 degrees this morning.   Love it!  The attic fan is pulling in that free coolness through the whole house as I type.  I am so ready to shut off the A/C and open all the windows.

So the head count yesterday was 30.  The crowd began nibbling on yummy smoked fish dip and deviled eggs.  The P1020137sideboard was FILLED with good good…marinated green beans, baked beans, cabbage casserole, marinated tomatoes, mac ‘n cheese, roasted potatoes, roasted asparagus, cole slaw, rolls, potato salad…I know I am leaving something out.  Unfortunately, I didn’t get a BEFORE photo.  And I didn’t get any of that roasted asparagus, since I was last in line.  Bugger.  Not that I needed any more food on my plate!

Our gals are great cooks…and great friends.  I was too busy to take photos (bad me).  I laughed at all the guys sitting out on the deck (would have been a good photo), with the gals all inside.  Isn’t that the way it goes?

Dick did a great job on the smoked salmon.  It was a bit time consuming---put the rub on, marinate 8 hours, take the rub off; put fillets in aluminum “boats” to dry out for 4 hours; smoke’em; remove skin.  And it didn’t really taste smoked!  It was very, very good.  Leftovers tonight.  Come on over!  We always manage to feed the multitudes.

That’s it from paradise, y’all.  Make your day great!

That's quite a smorgasbord! Yum! I would have started at the asparagus! It's one of my favorite veggies! Just saying. That really is a lot of prep for salmon. We just toss ours in the oven or onto the grill with a little butter, lemon and seasonings. And it's always so good.

My parents will be home in a few days, barring their flight being postponed, and I'm looking forward to eating some real food again. Frozen Lean Cuisines are OK in a pinch, but that's mostly what I had for 2 months. One would think I'd lost weight but my clothes still fit. Bugger.

Enjoy leftovers... the best part of cooking! Big hugs xoxo

That sounds like it was a delicious spread for 30, Sandy!

And it is so true about the women all congregating in one place and the guys another!

That cool weather sounds blissful. So nice to be able to open the windows and enjoy the fresh air.

Happy Monday to you and Dick!
